Dont go too low. Just low enough to let water run from your hips to your knees so to speak. Unless your some competitive power lifter you don't have to be doing ass to grass squats, that will not help you down the road or give you longevity. If your doing this for your health and yourself their is no need to risk your knees and everything else that goes with it.

if you're squatting PROPERLY there shouldnt be any issues for someone with no previous knee damage

Nothing against them lol, just going off the advice given to me by Don Reinhoudt. If you would like to lift into your 70s and on I can't imagine ATG squats will help get you their.
ALSO i'm pretty sure its been proven countless times that ATG squats dont provide anymore quad activation then parallel
