I would suggest using more additives then, such as Mayo, Olive Oil etc.
Any calories you can add onto your food, add them on :)

Ever tried frozen yoghurts? During my lunch break I often go to the supermarket and get some creamy fat one worth a whooping 800kcal.

Edit: Always carry a spoon + kitchen knife wherever you go to help yourself to some meals.

bag full of pre-shelled nuts and seeds
trail mix
prepare a snack tupperware bowl full of ground beef (eat it first as it can spoil)
bag of chips
invest in a solid weight gainer

I really hate cooking, I don't mind spending rhe $2/day it is a good idea though, thx!
