Simple answer would indeed be "eat more".
I advice you to find some high calorie products at your supermarket. For instance, every other day I eat a cream filled frozen yoghurt containing 800 kcal. BAM! This is 1/3th of advised daily kcal intake for lazy lifestyle.
The other day I focus on extra protein intake, like the chicken / fish / nuts you mentioned.
Boil some eggs, eat some bacon, grab more protein bars.
Also, do you lift?
