overall don't do more than 15 sets total (and even that is a lot, depending on how many reps/set you choose to do) for any given muscle group (ex, biceps). And 3 times a week is too many. 2 times a week, at most. allow for 3-4 days of rest in between.
typically 3-4 exercises with 3 sets/exercise is plenty. especially if you're focusing on 10-12 reps a set.
E:
also balance your workout. When you work muscles that work against each other (such as biceps and triceps), work them both equally.
