Nitrates are VERY bad for you and are also in the majority of hot dogs.
You'll notice that you will get headaches and migraines if you eat too much (test it out if you don't believe me).
Nitrosifaction occurs and converts nitrites to their active carcinogenic nitrosamines.
Vitamin C inhibits the process of nitrosifaction and oxidative damage caused by the carcinogen.
It's very bad and is linked to cancer just as tobacco is linked to cancer.

Nothing wrong with nitrates and nitrites
The only valid concern is the formation of carcinogenic nitrosamines
Though that does occur, it doesn't occur significantly enough to matter in a normal diet.. and nitrates and nitrites themselves are not genotoxic or mutagenic
They've also generally found no association between nitrate/nitrite intake and cancers of the GI tract and related areas where conversion to a nitrosamine does occur. So.
Just to make it clear - they are only deleterious in a great excess.. pretty much like anything. One mechanism is the conversion into a carcinogen and they can also modulate hemoglobin and impede its ability to adequately bind and carry O2

Hehe to be fair our responses are actually congruent, we just took opposite stances in terms of the approach
for instance, I even say they are deleterious in excess, which he immediately points out. I'm sure he'd agree that without an abundance of them, they aren't going to cause harm.

Yeah of course anything in excess is virtually bad for you even water

but the typical obese American eating turkey bacon, hotdogs, burgers, live a sedentary lifestyle, smokes, have virtually 0 intake of anti-oxidants/vitamins, no exercise, plenty of soda, no water then that person wonders why he has coronary artery disease, diabetes, hypertension and end stage gastric carcinoma...lol

The first thing that popped into my mind with what you said was "that's on the extreme end" but then I realize for the very average american it's really not that extreme.. it's actually quite ubiquitous. Sad realization I just came to :(

Yeah, it IS the average American. Then I ask myself if the Pharmaceutical Industries and Fast food companies have some sort of pact going on...lets get the average American fat, give them high cholesterol and hypertension...while we create cholesterol lowering drugs (which you see on TV all the fucking time LIPITOR) and BP lowering medications.

The Lipitor commercial was all like...if you notice changes in the color of your urine or yellowing of your skin or eyes then contact your doctor immediatly. LOLOLOL BITCH IT'S TOO LATE LOL
