technically all myofibrillar hypertrophy is accompanied by sarcoplasmic hypertrophy. So no you can't become stronger without adding mass to your sarcomeres

We have almost identical starting stats.

Started at 5'9/250. Dieted down to 230 before lifted. I'm now at 175 and I don't know what bulking is like but I've still made noob gains since it's my first time in the gym.

You'll be tired, but fine. Try an EC stack to control appetite/lack of energy.
