it's aestheticism. most of today's bodybuilders go for max bulk and max definition at max bulk. not just volume, but sheer mass. so what happens is that they lose symmetry and they don't create a unique, crafted aesthetic.
arnold was sculpting his body. he wanted perfection. and perfection was about how his body looked, not how big it was. he wanted to be a big bodybuilder (for his time), but he wanted to develop a very specific look. i think the best current examples are kai greene and the indominable dexter jackson.
he probably avoids HGH because it's horrible for aesthetics, but otherwise i'm sure takes a bunch of the usual stuff. either way, he's not training for max bulk, and this gives him time and energy to shape his physique.
i see what i perceive as glaring weaknesses in his physique but he has a better "look" than all of the ifbb olympia competitors, although kai, dexter and phil are not what i would call "bad" aethestically. phil is just an anomaly though (genetic superstar, a bit like flex wheeler in his day).
