The sweet potato is also extremely versatile: it can be cooked to taste sweet or savory and it's only about 100 calories per cup. Try these recipes and add sweet potato power to your diet.

Sweet Potato
Pancakes/Waffles

What better way to start the day than a plate of sweet potato pancakes?

This breakfast of champions will fuel your day and leave you licking your plate!

Ingredients
150 grams Sweet Potato, mashed
1 scoop Whey Protein (I like to use either vanilla, chocolate or cookies n' cream)
3 Egg Whites
1/4 cup chopped Walnuts (optional)
1/2 tsp Baking Soda
1/2 tsp Nutmeg
1 tbsp Cinnamon

Directions
In a large bowl, mix all ingredients until smooth.
Cook batches in pre-sprayed skillet/waffle maker on medium high temperature until bubbles form on the surface, then turn over and cook until dark golden brown.
Serve with cinnamon and sugar free syrup.

I just made this for breakfast and they are hella good.
I didn't measure my sweet potato but 150 grams is about 3/4 cup. I think I used too much because the mix was very thick. Still delicious :)
Also, the recipe doesn't say but it should be obvious that in order to mash the sweet potato you will need to precook them in which ever method you prefer.

I made these, but changed them up a little bit.

We used 4 sweet potatoes (boiled for 15 minutes, then mashed)
~3 cups of milk
4 eggs, beaten
~2tsp vanilla extract
1/2 cup butter
3 cups whole wheat flour
2 tbsp salt
2 tbsp baking powder
cinnamon and nutmeg to taste

Sift dry ingredients, and mix them into wet ingredients, etc

Thanks for the idea tho, they turned out awesome. Threw the leftover ones in the toaster to eat with my eggs this morning.
