If you listened and paid attention, Lydia always used that particular sweetener. Walt removed all but one of that particular sweetener at the specific table she was going to sit at, because she is a very "schedule oriented" person.

Todd didn't have a gun on him when Walt activated his weapon, so there was nothing he could do as far as fight back. Everyone that knew he even existed is now dead, and he looked out of the window to see what caused it. Jesse saw the chance and pounced as fast as he could.

Walt knew Lydia was a creature of habit. He's met up with her at the same table and same place multiple times.

He knew she drank Camomile tea, sweetened with stevia. He removed all the other stevia packets from the table and left the one with ricin there.
