I think the reason Walt poisoned Lydia with the ricin is that he knew that she had been over-paranoid in the past, since she ordered a hitman to kill Mike and all his men. Also, Lydia is the only associate of Walt's that Skyler ever saw, so she's the only person who would be interested in harming Skyler. Walt poisoned Lydia to protect his family from any possible threat from Lydia. And from my limited knowledge of ricin, Lydia should die within about 3-5 days after she ingested the ricin.
One thing I don't understand though, is why one day Jack lets Walt live and gives him a barrel with 11 million dollars. Then a couple months later, Walt comes to visit Jack with a business proposition, and Jack all of a sudden wants to kill Walt, even though nothing had happened between them since. (Obviously, Walt's business proposition wasn't genuine, but Jack didn't know that.) So what do you think caused Jack to all of a sudden want Walt dead?
