Sounds like a muscle to me, could be. If it only hurts when you turn your head.
Unless you feel the pain actually in your throat (like a regular sore throat)

it probably isn't muscle related pain

inflammation doesn't need to happen in a spot where i'd experience the normal sore throat that people have

i have those all the time due to allergies

best not to mess around with head/throat/spine stuff, see a doctor - least that's what i'd do over here in canada with our magnificent healthcare
