It'd have to be a game with enormous possibilities obviously. I think it depends on what genre you personally like.

For a pvm rpg, D2 is a great answer since there are 7 different classes and many ways to specialize each one, and each run through for each can be very time-consuming yet still entertaining. You can add timing challenges / speedruns for yourself in different categories, item hunts, hardcore mode, etc. You really could spend decades doing all that in that game.

For a sandbox/building game I like Rollercoaster Tycoon. An infinite number of ways to build a park and tons of detail and complexity can be used at a small level. Also a campaign you can speedrun / go for highscore.

Another good answer is Dance Dance Revolution, but really the harder clone of it In The Groove. A good source of fun and exercise and I already know even over 10 years of play you have room to improve.

It has to be one of those games where random shit can happen at any time.

Super Smash bros is one of those games. Seems like every time we play something unexpected happens.

Something classic like a collection of old arcade games would be good too, or maybe some old-fashioned card games. Basically any game with a high-score to beat is a good choice, like Tetris.

Basically any RPG can be beaten once 100% and that's it, so that'll get boring. I guess you can challenge yourself to bet it in different ways or as fast as you can, but meh, seems like that would get very boring.

I guess I would choose the original super smash bros for n64. There are high scores to chase (if you keep track of them), different ways to beat the game, it's challenging, random things always happen.
