Gluten is a protein produced by wheat. People with siliac disease can't eat gluten. There was a study showing there could possibly be a sensitivity to gluten, but it was discredited by the same group who published the original study using stricter controls and larger sample sizes.

If you don't have siliac disease you are unaffected by gluten, end of story.

you don't have to be celiac to be sensitive to gluten, it's not the same thing... but gluten aside lectins like WGA are also a problem for a lot of people and may be the actual culprit for most cases of 'gluten sensitivity'

bottom line, dietary intolerances are an actual thing and most people are on that spectrum even if they don't experience significant inflammation from food

Obviously it's something real.
I think I did a science project when I was a little kid on gluten.

It's found in rice :)
