Well it's gonna be hard to tackle all of those areas with just 50k. You are gonna need to do it almost all by yourself. Forget carpet, a nice wood like laminate will be easy to lay yourself. The kitchen and bathroom(s) are going to wipe out most if not all of your budget. You said the house is worth 75k. Is that in its current state? What does a remodeled house in that area sell for? You need to do comps. Go online and see the homes going for sale and what upgrades those homes have. Then you can base what you can/need to spend to make a profit.

Oh man, good luck sir. Our house is also 1800's, but in much worse shape than yours. All I can say is to prioritize, you won't get it all done on that budget so start with what NEEDS to get done. Things like plumbing and electrical updates and structural integrity. Everything else is cosmetic and can be saved for a later time.

I did 2 bathrooms and a kitchen for less than $25,000.

I'd be careful cutting in and removing floors in a house over a century old.

For sure

As to OP good luck with the rebuild, I am finishing up the purchase of my second house this week, it is also 100 years old. I am getting it for 40k. 3BR, 1bath, finished attic, full basement. 25x20 separated 2 car garage with a loft. House needs some repair work to roof, new kitchen and bath. Then rest of the house needs the hardwood refinished, paneling removed to see what's underneath(plus it's paneling top to bottom) and cosmetic. Garage will need a full roof, HEAVY cleaning, it looks like it has the full 100 years of grime and dirt build up. I plan on probably spending more money on the garage as I am a car guy and want to get a lift and all the garage goodies I have always wanted. I want to keep the older look to the main house though and will be trying my best to keep that aged look while still looking fresh and sharp. I have a lot of antique furniture so it will fit very well with this new house vs the current. Will be a good bit of work but worth it in the end as it will be 100% mine. Paying cash for the house, have enough extra to get probably 75% of the work done that I plan to.

Good luck man hope it turns out like you imagine.
