Reflexive verbs don't always literally mean someone doing something to oneself. It has a passive meaning--so for example s'appeller literally means "to be called", and not "to call oneself".

why not omelette avec du fromage?
can you attach cheese like in english, where we say cheese pizza instead of "pizza with cheese"
and then why wouldn't it just be fromage omelette

In English you can use nouns as adjectives without any change in spelling or sentence structure. You can't in French.

'Cheese omelette' in French is actually 'omelette au fromage'. 'Omelette du fromage' would mean something absurd like an omelette that consisted only of cheese.

omelette au fromage? the only definition of au that I know is to mean to
as in parle au le garcon which my not be grammatically correct but gives the idea.
