Easy. Rice & 2 cans of mixed Medley beans.
Feeds at least 4 people. Been cooking this in my family for as long as i can remember.
-Start off with some olive oil in a pot, chop up some spanish onions, red bell peppers into small pieces or chunks, however you like.
-Add to hot oil.
-Sauté the onions and red peppers, be careful not to burn onions.
-When the onions are cooked golden, add your 2 cans of Mixed beans, you don't NEED to strain the beans from the liquid that comes in the can, if you desire it is acceptable.
-Fill an empty can with water, pour into beans. Let cook on medium to high heat (if covered i suggest lower heat), stir frequently as they will stick.
-Cook until there is little water left in the beans, you don't wanna overcook or they'll be dry.
-Add salt if desired, serve on Rice, goes well with hot sauce.
