Sounds like you're pretty much there yourself.

I'd personally use fan blades for the peddles. Less trimming and fucking with sheet metal. Which is not fun

home depot get:
metal sheers (look like plant clippers but tougher)
copper sheeting
something to mark the cut design with (sharpie markers)
epoxy (to bind stuff together)
Copper pipe (for the stem) - can be bent to look like stem or left straight


the best part is if u decide to junk the flower u can sell for copper scrap price (~$2-4/lb)

To make:

Find a sunflower pic u like online that has petals u like that are tracable - blow it up as big as u can to fit on a piece of paper.

Print one petal on a sheet taking up the whole thing

cut petal out of paper & trace on copper with sharpie (also cut out the center circle - can hammer for 'seed/bumpy' effect)

cut traced design in copper sheet with metal sheers

Epoxy petals to the center circle

fix flower to stem using epoxy (may need to notch the flower somehow to get a better/stronger fit)
