Different play styles are typically counters of others
That's where using statistics of those players' previous matches with each other come into play using some basic linear algebra. For example, using Roger Federer and Rafael Nadal, if I calculate that Roger Federer will win if he has a 75% or greater first serve chance, and in the past week he was getting 80% of his first serves, I might bet on him.
Of course, every player has a bad day and sometimes they buckle in the final stages of a tournament, so this is mostly just for fun. I can't see myself betting more than $5 on a match.
/e And also, if two players' last meeting was 5 years ago those statistics aren't relevant enough to use.
