Now this is my first pass *giggle* so ehm, just a lil newbish question, how do I stat samurai, just str aswell as I did on barb? Or go 100+ dex at first, then str, hmm.

Good rule of thumb is to have between 100 and 120 dex and rest into str ,
but everyone has their own preference.
