Actually that's not entirely true, it's really because the particles in our atmosphere only allow through certain pigments when light hits it at certain angles. Depending on atmospheric conditions as well as location sunrises and sunsets can look very, very different

also that's why it appears red/orange when it's rising or setting, because the light pigments are refracted in a different way
