If I have a rare helm and want to use a quest to socket it will it always get 1 socket or could I get lucky and get 2?

all rare items can only get 1 socket max from quest or cube recipe unless they are dropped/identified with 2 sockets

Only time you could possibly get 2 sockets is a magic item. Rares are always one as stated.
