Tbh man, just tell her you watch it sometimes not a ton where you know like every single thing about it but research some basic things about it and your state team (NY Rangers or Islanders) and really that's it. Get to know the names of their good players so you can somewhat have a conversation about it. It's tough to do when you don't know anything at all about the sport.
