Soul calibur 2/3? It's a fighting game ofc but it has story modes where you level and ofc lots of weapons/chars.
Soul cal 2 story mode is very long and depending on what system you get (playstation/gc/xbox) you get a special char (link/spawn/tekken dude I can't think of name).
Soul cal 3 story mode is 20 chronicles/chapters long and you can create your own char, but unlocking EVERYTHING would keep you busy for a very very long time. (this is only on playstation 2).
There's also Soul cal 4 BUT I haven't got it yet, so I cannot judge it. (playstation3/xbox360. Guess nintendo's wii couldn't handle the epicness this time, lolz).
Looks interesting though from the special chars that people have made on it:

The DS ones are the worst FEs, no character background, class changing, no supports and no originality
it lacks everything that makes FE, FE to me

i liked the game itself but it was kinda lacking

one of the persona games, which for me has become the only reason i now want a psp
