Resident Evil 5: Wii Edition
Mario Party Wii(if you have some extra controllers for other people)
super smash brothers brawl
all guitar hero/ rockband games.(just grab cheap instruments)

all depends on who or how...if you are playing with the right people, 1 extra person is good enough...some people are fun and challenging to play against...but for the most part 3+players are needed
