When I go back into the dungeon, after clearing it, do the chests/mini boss enemies respawn or are they dead permanently afer their first death since they're the enemies which drop the materials.

Well, I did manage to beat him, but I tend to go thru the bosses (only 2 so far tho) by Trial and Error. Usually takes me a few attempts to get the boss'movements down

I believe tomorrow is my next boss to fight. Should easy I think.

that I'm not sure of, haven't done the same dungeon twice yet but I would assume as much

You can also cheese him by staggering him on the stairs, and visceral attack him toward the stairs railing. If you do it right you'll launch him out of bounds.
