You can't even upgrade your stats if you don't fight him...so yeah, go fight him, lol.
You don't have to beat him to unlock upgrading, but you need to have faced him once.

so far I've only found em in cainhurst...and yes you wanna kill the cleric beast as you get a badge, insight and a lantern.
