I also wanted to ask: If you die in DS3, do you have long roads to come back to the point where you died? e.g. in bossfights?
And how often can you save?

When you die you lose your souls(used to level up. buys items)... you have only 1 chance to make it back to the spot you died to recover any souls

You can save and exit anytime and youll appear same spot when re-load.

when clearing/ exploring a zone, some doors/ lifts/ illusory walls are short cuts back to the bonfire or boss.

Some locked doors are at progress routes and you may need to pull a lever/ kill a boss or get a key to open it.

And how do you get souls? By killing monsters? Or how many can you collect max?

So Bloodborne is easier than DS3?

"Too much dialogue" doesn't sound like my type of game either  story is fine but TOO much dialogue can get boring easily.
Maybe I should give fallout 4 a try then, but DS3' world looks like something I would like more.

Bloodborne is like DS3 lite.
Some of the systems just aren't there and it's more of a streamlined version which seems to suit beginners better.
