Correct me if I'm wrong but:
You don't find weapons like in the soul series but your weapon "advances.

Is the above true?

Has anyone tried killing those big ones you meet, the one once you get down the stairs and the one pushing at the door?

I think you can get a few more weapons than the starter ones
From what ive seen is you just buy the stuff from the shop with echos and theres more stuff as you progress

Weapons are found in chest and bosses(not all bosses) i heard
