and, why are the horses always gone when i step of to fight?

werewolf form is very useful, they can roar which causes your enemies to flee, they can do a charge up attack that can knock back your enemies, plus their attacks are pretty fast if u time it right, and horse sometimes wander around you just gotta look for them

Do side quest's always fall under Miscellaneous or can other ones be side quest's.
Haven't played for too long but having the trouble differentiating between main and side quest's.

the only main quest is the one progressing your story as dragonborn

Some side quests are under the main while others are under misc.
I think any faction ones are under main. While the sub random ones are under misc

you guys go one handed or 2handed?
