Save the game to your online storage before doing last boss and once you've done the last boss, reload that save and then pick up the last trophy.

I made 3 chars and have ran through the game quite quickly, with a buddy or 2 it doesn't take long, plus playing with different builds is like a new experience

With a new character you should be able to just run through it really fast since you know where everything is and what is optional or not.
