Probably because there was not that much then. To be fair, WW1 was fought mostly with bolt action rifles. The main automatic weapons were the machine guns you would find in a nest or something like that. WW1 warfare was the first of its kind, where before that was gentleman style infantry lines firing into each other, where longer accurate shots were valued over short range spray and pray. Also the cost of semi auto and auto weapons were far more expensive than bolt action.
Obviously they still added all these types of guns, because pure trench warfare with bolt action rifles running into machine gun nests and artillery fire would get boring quick. If they add too many things to this game though, you'll start to take away from the WW1 ambiance, and start heading towards WW2.
TL;DR - game is beautiful looking and the gameplay is great.
