Pretty sure the bones are useless
Scales might be for armor im keeping them

Sell them. You will fight a lot of dragons later on and you need some cash in the beginning. Unless you plan to get your smith skill up to 100 right off the bat.

Bones make heavy armor
Scales make light armor

So I've been told.
