well, by doing some quests you get more quests from that certain quest you did, meaning that the more quests you do of that same string the better your reward will be.

say you do one quest and it gives you 100 gold... like you had done,
then it brings you on this string of quests and the next one rewards you with 250 gold then after doing all of the quests you'll get rewarded with
a really nice weapon or armour.

giant killing quest was just some random "jarl has put bounty on a shit" quest which never gives you much gold

the other one was from some special quest which might lead to another quest

Habits from older games die hard for me. I always have around 20+ saves per character. But sucks :(
