For xbox 360 definitely Forza 3/4
those games are great other than the driving physics.

But I would also recommend Dirt 3, wouldn't recommend NFS Shift 1/2 (although 1 is better than 2), Test Drive nlimited 2 is super fun, GRID, F1 2010 (soon 2011)

I'm a guy who MAINLY plays racing games. I casually pop in BFBC2 to shoot some niggas up but you'll mainly find me playing Gran Turismo 5 best racing game to date if you have a ps3
