Yesterday was cold:

Kinoo wa samukatta desu


Is it wrong to say:

Kinoo wa samui deshita.

or

Kinoo wa samukatta deshita.

and:

Gochisoosama deshita.

what does the "sama" stand for ?

As far as I know, this is wrong. "samui" 寒い is an i adjective (identified by kanji + i) and thus has a specific rule as how it should conjugate. I adjectives are always put into a past tense by dropping i and adding katta. That said, I have seen plenty of times when I adjectives were used like you wrote, mostly on blogs and other informal websites.

This is wrong. You add desu at the end for politeness only. it does not actually influence the tense of the sentence, only the "katta" does. Therefore it needs to be Kinou wa samukatta desu.

It's probably best not to delve into some of those set expressions as they absolutely make no sense when translated into another language. "Sama" is basically a politness suffix. I try not to translate things like okaerinasai, itadakimasu etc. Just learn their meaning and use them without thinking. It is, after all, how we do it in English.
