Will I be able to survive with only the knowledge of hiraganas and katakanas in Tokyo or somewhere else in Japan.

for example, does the roadsigns have everything written down in basic hiraganas or kanjis ?

road sign is written in kanji mostly.. for example 「止まれ」stop
u can still survive without learning kanji cuz eventually u will learn some kanji when u get used to live in japan

If you can't read kanji you won't really be able to read anything in Japan.

If your spoken Japanese is good, then you'll be able to survive, but it's always a good idea to learn how to read kanji. My first time going to Japan was a few years ago and I could only read a handful of kanji, but since my spoken Japanese was good I was able to manage just fine. If anything just ask questions and you'll more than likely get the answers you want.
