2k is really cheap, in norway you have to pay 2000$ just for a normal apartment, but it cheaper in beijing or? and is it easy to find apartments? we don't want to organize any thing, we just want to go down there and take it as it comes. we also want to live on the countery. we are not much of city people:P

We will bring about 15000$ and hopfully we both get ~~1500$ a mounth in wellfare And we will live in china in 3-6 mounths, on this time we want to go to tibet and mount everest(not clime to the top:P just look at it, and clime a little) live some nights at hotel and hopfully rest in apartment go on museums etc train or plane from beijing to tibet/everest and food and drink's

$15k + $3k/month is well more than enough. You could live pretty well on that actually. I don't recommend living in the country, but if you insist, it is possible. The services available will be far less than in the city, and you will have a much harder time getting around.
I strongly recommend living in 五道口 with the rest of the foreigners studying Chinese. The area is set up very well for people with remedial Chinese skills to survive and there is housing available at 地址大 if I remember correctly.
Regarding hotel prices, $60 seems on the high side, even for Beijing. I've always lived on campus in the city, so I don't know what hotel prices are. I recommend using
http://www.ctrip.com/ to look for your hotels, though. My intutition is that it should be much cheaper than that.
Tibet, I've heard, is quite beautiful. It's a pain to get in though. You have to go with a "tour group", which requires some inane paperwork. I've never bothered going through it, but I've heard that it's a hassle.
