I understand that the new monk one (ninja) has a 360 arc of attack. The huntress has some floaty thing while you jump. What do the squire and apprentice do?

I think you've heard wrong rumors. I have apprentice costume (Dracula) and it doesn't do anything neither do my friends' ninja and angel costumes. they are just pure decorations.

better buy some glasses

ninja holds weapon on his back, jumps like a monkey and swings weopon over his head
huntress does have different jump animation as far as i know

squire and apprentice does not have any different stuff

Theyre just skins to make you look cool. they have no effects, Except for monk makes you move like a ninja.
