Since you're using a dagger on a samurai and the total dex from gear is 47 without it, I'd go with the lvl 40 plate that puts your dex from gear at 67. If you want, that can be an extra 20 vit you can stat for hp. Once you're not samurai, then what TJ said

Level 40 Plate for the Dex addition for your weapon as stated above. If you come across EPs at higher levels and can not take the damage, you could switch to the EE plate and switch back later on. Note: normally in a group, you just stick with 40 plate and sit in the back and let the healers help you out.

I usually am solo, never have enough time to coordinate a run with a group
