Yo! Got some questions about fishes. Maybe someone knows :)

How big stacks can you have on each lvls?
Max life and Mana on each tiers?
Whats normal prices buy/sell on them each tier?

stacks: https://docs.google.com/spreadsheets/d/1cxOAbE-pIM4H57d2H_Siv2rs7m0hPFEWI_3NsAhSM2o/edit?gid=0#gid=0
think its as simple as fishing + cooking level = total level.
If the fish have been suff'd then add the suff level on top.

each tier is +100 max life/mana
so sardine 25-100
herring 50-200
cod 75-300
etc
sardine are worthless
herring are near worthless. cooked mana herring do ok.

Rest are pretty much 750-1k life -> 1 fg, 300-500 mana -> 1 fg
price shifts reasonably regularly

so some example prices:

Magical trout fish
Level Req: 5
Use Item to Receive Effect

Recovers 509 Mana
100% Cooked
Quantity: 250

i'd look for about 250-450 fg for these if i was selling them

Magical cod fish
Use Item to Receive Effect

Heals 378 Life
99% Cooked
Quantity: 200

i'd look for about 60-100 fg if i was selling these

Oh and if you have a super trash stack, for example you accidently combined your life fish and mana fish into one stack, then usually it sells at a token amount for suffusensing reasons closer to 0.1 fg/fish for cod+

fish come in breakpoints
sardines level 1->infinity
Herrings level 5->infinity
Cod level 10 ->infinity
etc
so catching level 10 fish can get you either sardine herring or cod

If you use fish in a well:
All levels - Chance of mob spawn including ep's
level 1-14 no effect
level 15-29 no sardines
level 30-44 no sardines or herring
level 45-59 no sardines or herring or cod
etc

some other things, this is the fishing guide i used.
https://forums.d2jsp.org/topic.php?t=80825020&f=74&o=0
One of the main things i found interesting was that if you use a crappier rod, the faster you'll catch the fish. However it will usually be more difficult.
You should also never not use a rod, the loaner rod is a waste of time.

another thing to note, the fish stacking table is actually in the generic guides for the game: https://ladderslasher.d2jsp.org/index.php?g=7
you'll need to click on it to bring up the table, but it's the same one as in that excel link.
