So I recently restarted the game after many years and while soloing I keep losing my well.

Not sure how, do wells disappear after going to town or moving back and forth repeatedly?

Feels like this wasnt the case before I quit...

Well have a chance of poofing now while welling. Also from fishing.

I had like 5 wells poof on me already before I welled everything I got in my vault.

Yea, the well is mighty unstable now. Sometimes it'll poof after 1 item

There are events that add "well longevity"
But even then it's unsure.
I've had random wells last all my items and my guildies.

I've had wells poof after 1 item as I said before..
Events are your best bet to decide when to well now.
A lot of people will find maps that have +1well
And save it for an event that's good.
And use it then and do whatever wells they can.

and 1 more little thing to add to the above said:

let's say you find a well in a cata, then you decide you first want to complete that cata and then come back to the well; or if you happen to find a well in the last tile of a cata and in any of the two previous cases you want to go to town for whatever reason, remember to keep a mob alive (whistling with t), otherwise the cata will reset and you will lose the well.
