If I get a mule to lvl 30 to use a EES wep, what happens on reset? If his inv is full and he loses the 5 or w/e EES's, where the items go?

The items stay in your inventory and your currently equipped items will also be added to your inventory.
No items will be lost and it will show something like 20/8 items in inventory. You can move these items to your vault, transfer them via the marketplace, or sell them.

So if inv is full, equipped items just stay there but red and unusable, then if I pull items out of inv it'll just shrink?

Yes, the inventory will shrink until you have no more than 8 items on the character again. Having some free vault slots or slots on other mules comes in handy to quickly move the items around again in case you want to level up that mule after a reset.

what if we were deleting mule slots when the change happened, are those gone forever? I just notice people with higher mule count

In case you mean people with more than 8 softcore characters, yeah. Preexisting characters above 8 on each core can still be used. If someone has 16 softcore characters and deletes one of them, they can only create a hardcore character on that slot.
Max 16 characters in total, 8 per core.

same as getting a mule to 71 filling it up with high level slot gear then mq it... you can then transfer slot gear to next mule...so really only need 1 good set of slot gear for all mules... fill them up either change gear or mq char.... and use slot gear on another mule

I do this in a sense, however, before I master quest, I swap items with the EES items and transfer them to either another mule or put in the vault. Oh, I also transfer all Maps, Comfreys to mules before starting again with my main character. (if I played that way) ... so, I will transfer them to this character before MQ'ing and use another character to carry on leveling up. Basically 2 or more characters that I play with, not one main.

i also use 2-3 chars to climb with 1-2 for class change and 1 rerolling as mage ... I don't reallu like off mage builds mana pool always to low for my taste ..plus i have sht melee gear still ... my 2 class change chars both skill stuff ... so always something to do while i regen in town.. mage just uses regen mana gear or use shrines..
