Vitality Explained?
This is a simple one - 1 point of vitality adds 1.54 points to defense

For example, when using an armour with base max defense of 67:

At 131 vita (without charm) I have 152 defense
152-67 = +85def = 131/85 = 1.54 defense per point of vitality

20 vita charm = 165 defense (total 151 vita)
165-67 = +98def = 151/98 = 1.54 defense per point of vitality

25 vita charm = 168 defense (156 vita)
168-67 = +101def = 156/101 = 1.54 defense per point of vitality

30 vita charm = 172 defense (161 vita)
172-67 = +105def = 161/105 = 1.53 defense per point of vitality

32 vita charm = 173 defense (163 vita)
173-67 = +106def = 163/106 = 1.54 defense per point of vitality

How much difference does 5 defense make? Not much, which is why I'm using the 20 vita charm (it has the most +strength).

Wrong, I have a 0-2 defense armor and I got over 50 vitality, and my defense is now 0-3.

What we need is in %, it varies on each armor.

One vit adds around 0.95% on my calculation last next didnt had enough time anymore due to school.

Re-calculated the 5 scenarios to use % Enhanced Defense (ED) per Vita point

I. 131 vita =152 defense
152/67 = 127% Enhanced Defense.
127/131 = 0.97% ED per point of vita

II. 151 vita = 165 defense
165/67 = 146% Enhanced Defense.
146/151 = 0.97%

III. 156 vita = 168 defense
168/67 = 151% Enhanced Defense.
151/156 = 0.97%

IV. 161 vita = 172 defense
172/67 = 157% Enhanced Defense.
157/161 = 0.97%

V. 163 vita = 173 defense
173/67 = 158% Enhanced Defnse.
158/163 = 0.97%

Only your level and the quality of the item has effect on the transmutation.
