It should be same prof per time spent but less prof per mute

It's less prof per item broken down into an essence, yes.

The way transmuting prof works is, the more time spent breaking down an item = more prof points

So faster transmuting = faster stripping of item = less prof per item.
It's kind of a wash imo, if you have the supply of items to break down it's great, if you have a little supply of muteables to break down.. you may be better off waiting for the next event

How can instant be faster?

It you're selling essences, it's more fg per time spent muting, if you're buying items to mute, it's fewer prof points per fg spent
