Great information and answers. Two things:
#1: Ratios = % chance to perform a critical strike, but stat points to damage is more effective, as someone stated, Dex for daggers / Str for Swords etc.
#2: When to add Vitality... starting levels or higher levels. This is subject to change based on your personal preference. Example: I play Hardcore, so my minimum Vitality stat point to reach is 75, this changes based on armor type, being solo only and whether I use Enhanced Effect armor. Also character class restrictions to armor type of course. So, I will pump Vitality at the start - Level 1.
If your level 1 to 20 weapons / cast charms are very good, you won't need damage stat points (Dex / Str / Int) and can reach your specified vitality target faster and pump other stat around mid level (30ish) which still helps with kill speed. Basically @ level 1 you can use a white Tier III dagger and 1 hit kill, so using a 50%+ Tier III dagger is better, and can still do well from level 5 to 10... again, this is subjective to you personally. Test for yourself.
EDIT: basically if you have base 75 Vitality, you will still have the same amount of hit points @ level 55 onwards, but if you do NOT have 75 Vitality @ level 55, your hit points are less, but once you get 75 base by 65, it will be the = to it whether you reach it faster or later. NOTE: losing myself with my example. Think there is a table that has your hitpoint total based on Vitality etc.
