No there isn't although I can tell you for a fact that high end arena monsters can have up to 100+ defense. I was hitting some 0's on my crappy 56 EE dagger =/

Now I upgraded though so it's less bad :P

Edit:

Oh and generally maze monsters have lower defense. Dunno if you like to catacomb.

well ofc you take things like that into account without much thought
axes will always surpass swords at low levels because a monster's life + defense is less than your axe's minimum damage, so auto 1-hit
and I will try to come up with a correlation between overkill and defense soon, so the victor between swords and axes can be determined
I wasn't trying to come up with exact things because we can't know a monsters stats at all times, but I was able to point out some advantages of different things
because as it is now I don't have a formula for comparing the two effects but I'm leaning towards axes being better in the early levels and swords being better later, I'll come up with a good conclusion later
