Just wondering which server to start on, what class would be best to start with, and if anyone would be willing to walk me through a bit

Sorry, Im new to the Knight Online system, which one is the EUKO server? I don't see it in my options

Yep.. Go and download EUKO otherwise it will be hard to start and play with others unless you will buy items for $$.
Best class to start with? Priest. Ofc you will have to learn how to PvP with it, coz with this char its a little bit complicated ;). Exping priest is smooth and easy. Read some strategies for Battle Priest and Full Plate Priest.

When you will learn how to combo, and want some better experience in PVP world, try mage or rogue.
