That being the case how do humans see the sun "set" in the horizon?
If its a case of the light not being strong enough then the sun should still be visible as a bright star at night (in the model above) not disappearing below the horizon

With sun constantly above you its impossible even with "perspective", unless its not below the dome but actually outside and rotates around the earth as Card_Sultan proposed.

the sun isn't setting over the horizon. the sun is still in the sky and just reached the vanishing point (converged). It reached the limit of human vision until the sun is no longer visible, and then shortly after, the light radius from the sun is no longer visible to the human eye and we see night time

You stated that the stars are attached to the globe and the sun is below. Obviously then the sun must be closer
We can see the stars light so then the sun's should then still be visible since its still above us but closer.

But it has a vanishing point when we can still see the stars behind it?
From a side view your model would work something like this

i am pretty sure that the world is flat.
some of my relatives went to antarktis and one of them fell off the end and never came back :O

classic error from someone misunderstanding perspective and convergence



you're trying to compare 2D side view with 3D optical (human) view.
And you are NOT seeing the stars above USA, you are seeing the stars above YOUR location in Africa.
You seem to be under the impression that the human eye has unlimited zoom or vision......it doesn't.
