Observe it from low orbit.

Observe it from a plane, or one of the many mountain peaks across the world.

Observe multiple sunsets with an ascending drone.

Have 2 people, using HAM radio, or some form of communication, several hundred, or even thousands of miles apart, east/west of each other, and they time how long it takes for the sunset to reach from one person to the other.
(this information can be used to infer the curve of the earth between them)

Or use a high powered laser, and a reflector, position across the pacific from one another, then shoot that laser and see if it reflects back, if it does, flat earth, if it does not, globe earth.
