when alcohol is created there are differnet kinds of alcohols that are created, some of these alcohols are very bad for you and others are your normal drinking alcohol.  take say 50 gallons of beer, there might be half a cup of that really really bad alcohol in that entire 50 gallons, so since its all diluted it dosnt matter if your drinking it.

now that really bad alcohol also tends to evaporate at a lower temperature then the rest of the alcohol.

so when you distill that 50 gallons of beer, the first alcohol that evaporates recondenses and comes out as moonshine is going to be that 1/2 a cup of pure bad stuff, that is the stuff that is un drinkable.

so you just dump that first pint to run from your still and the rest is all perfectly fine to drink.

I'm not much of a wine drinker, and particularly, I hardly ever drink reds, as I don't care for dry wines, and most reds are dry. When I do drink wine, I prefer the sweeter Germans, like Riesling or Gewurztraminer, or Moscato (Italian).
